A coffee revolution has been quietly developing in America since the 1980's when speciality coffee was first actively marketed in America.
Up until then, the dominant coffee available and purchased by Americans was derived from the Robusta bean - an inexpensive and inferior-grade bean. As a result, our palates grew accustomed to coffee that was weak, bitter, watery, and lifeless. Most of us had never tasted the real thing.
The higher quality and richer taste of the Arabica bean began to filter into the market during the latter part of the twentieth century through small coffee companies who imported and roasted these beans. They were then offered to consumers who became more discriminating than the generation before.
As the coffee roasting prowess of these companies grew, so did the satisfying
results. Their coffees had greater depth, complexity, and flavor. These pioneering companies flourished in different parts of the country as they promoted their new flavorful coffee. Today the trend continues with more and more people discovering the richness of specialty coffee. Once again America's palate is adapting as it explores the subtly, finesse, sophistication, and taste distinctions of truly good coffee and the difference "fresh-roasted" can make.
